WHere is a simplified version of a drink found on a new cocktail list. This is a batch prepared mix that's loaded with the essence of the festive period, which makes it excellent for a holiday party. Reserve the remaining cordial for morning drinks, sweets, or to make additional servings of bikinis.
Bikini
Makes enough for 10 people
Ingredients for the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Premix (yields 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Directions
Making the Syrup: Place the listed components inside a saucepan, heat until it reaches a simmer, agitating to dissolve. Next, take off the heat and let it to cool fully. Transfer into an sterilised bottle, seal and store in the fridge, where it will keep for around one month.
To make Batch Mix: Pour all the liquids into one sizeable container, let it rest for one hour, then pass it through , ideally through muslin, making it completely strained.
To serve: Add 85ml of the batch mix to a cocktail shaker containing ice, and stir lightly for one minute to cool it down. Filter into an frosted cocktail glass or equivalent, decorate with a few cranberries and complete it using a brief mist of mandarin oil above the glass.
